Quinoa and Chicken Power Bowl

This Quinoa and Chicken Power Bowl is a trending, nutritious dish that’s perfect for boosting energy levels. It’s packed with protein, fiber and essential vitamins and minerals. Plus it’s easy to make and delicious!

Ingredients

  • 1 cup quinoa
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 avocado, sliced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • Salt and Pepper to taste

Instructions:

  1. Cook the Quinoa: Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover and simmer for about 15 minutes or until the water is absorbed and the quinoa is tender. Fluff with a fork and let it cool.
  2. Prepare the Chickpeas: In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, avocado, red onion and parsley.
  3. Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, ground cumin, salt and pepper.
  4. Assemble the Bowl: Add the cooled quinoa to the chickpea mixture. Pour the dressing over the top and toss gently to combine. Sprinkle with feta cheese if using.
  5. Serve: Divide the mixture into bowls and serve immediately. Enjoy!
