Ingredients
- 1 cup quinoa
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 avocado, sliced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 2 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- Salt and Pepper to taste
Instructions:
- Cook the Quinoa: Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover and simmer for about 15 minutes or until the water is absorbed and the quinoa is tender. Fluff with a fork and let it cool.
- Prepare the Chickpeas: In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, avocado, red onion and parsley.
- Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, ground cumin, salt and pepper.
- Assemble the Bowl: Add the cooled quinoa to the chickpea mixture. Pour the dressing over the top and toss gently to combine. Sprinkle with feta cheese if using.
- Serve: Divide the mixture into bowls and serve immediately. Enjoy!
